Resumen : Date fleshes of low quality (second grade dates or date by-products) from two cultivars ‘Assiane’ and ‘Aziza bouzid’ growing in Figuig oasis of Morocco, were characterized by the same values of sugars, dietary fibers, ash and protein as dates of high quality. The mineral analysis indicated high potassium content for the two cultivars followed by sodium, calcium, phosphorus and magnesium. ‘Assiane’ gave the highest value of all mineral elements tested. Levels of essential trace elements (zinc, iron, manganese and copper), selenium and nickel are important in flesh of the two cultivars. The chemical composition of dietary fibre concentrates showed high contents of total dietary fibre (between 90.76 and 95.23%) and low amount of protein, ash and fat (between 10.40 and 11.19%, 2.71 and 3.53%, 1.13 and 0.98% on a dry matter basis repectively). Dietary fibre concentrates showed also high water-holding and oil-holding capacities (6.55-7.91 g water/100 g and 5.51-5.45 g oil/100 g, respectively). Thus, the date by-products provide a good source of rapid energy (sugars) and a good nutritional value, based on their dietary fibre and mineral contents, that could be used in the manufacture of value added. Indeed, dietary fibre concentrates can be incorporated in some food product to modify textural properties and stabilize high fat.
